Due to its high fat and low carbohydrate contents, Saint Agur is a great cheese for people following a ketogenic diet. Moreover, like most other blue cheeses, Saint Agur has low to no detectable levels of lactose. As a result, even the most sensitive lactose intolerant cheese lovers tend to be able to digest this French blue cheese comfortably.
All commercial versions of Saint Agur are made with pasteurised cow’s milk. However, due to the presence of the blue mould Penicillium roqueforti, Saint Agur is not deemed to be safe for pregnant women.
